Potato Skins
Ingredients (use vegan versions):
  • 1 large baker potato
  • 1 can vegan fat free refried beans (black or pinto- or you can make your own!)
  • salsa
  • vegan "bacon" bits
  • green onions to taste
  • jalapenos to taste
  • salt, pepper, olive oil
  • dressing: vegan ranch dressing packet and vegan yogurt
Directions:

First bake the potato. Microwave works fine, it's easier. Just poke some holes in it and cook on high until done (usually 10 minutes).

Cut potato in half once baked and let cool for a few minutes. Once a bit cool, scoop out the innards, but not all of it, leave a bit. You can use the insides for mashed potatoes or some other meal if desired. Then brush a bit of olive oil on each side of the potato and cut into strips. Season inside with s&p. Then put a generous amount of refried beans (cold or hot) onto each slice, then some bacon bits and jalapenos. Put on a baking sheet and bake at 400 for approx 10 minutes until bottoms are crispy. (some ovens are complicated, so this may very)

Then when it's cooked up on a plate and top with salsa and chopped green onions. It's great with vegan ranch dressing (just mix the dry packet with the tofu yogurt and viola!)

Serves: a few/it varies

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
