Eggplant Vegetables Bake
Ingredients (use vegan versions):
  • 1 eggplant, cubed
  • 1 tomato, sliced
  • 0.5 red onion, sliced and seperated into rings
  • 1 yellow pepper, sliced into rings
  • A few whole cloves of garlic, peeled
  • 1 cup vegetable broth (or water)
  • 3-4 tablespoon tomato paste
  • salt, pepper, paprika, hot pepper and other spices to taste
Directions:

1. Soak the cubed eggplant in boiling water to cover for 30 minutes.

2. Make the sauce using the broth, tomato paste and spices. Add whichever spices you want to this.

3. Spread a little of the sauce at the bottom of a baking dish.

4. Arrange the eggplant over the sauce and pour some sauce over the eggplant. It is possible to add some soy cottage cheese and mix it with part of the sauce and use it here.

5. Arrange the rest of the vegetables over the eggplants so that they fill up the whole dish. In addition to the vegetables given, you could also use zucchinis, mushrooms and other vegetables.

6. Pour the rest of the sauce over the vegetables.

7. Bake uncovered for 10 minutes at high heat. Then, lower heat and cover. Continue baking for about 30 more minutes.

This can be used over pasta or rice, or as a plain vegetable dish. I think it would also make a great Pizza topper.

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
