Eggplant N
Ingredients (use vegan versions):
  • 1/3 - 1/2 cup chopped onion
  • 1/2 cup sliced mushrooms
  • 1 thinly sliced broccoli stalk
  • 3/4 - 1 cup chopped eggplant
  • 1/3 to 1/2 cup canned lentils
  • 1/3 cup rice
  • 1/2 - 3/4 cup salsa
  • allspice
  • garlic powder
  • paprika
Directions:

This recipe is extremely low maintenance and easy. I'm a university student, and this can be made 20 minutes before heading out the door!

Cook the rice as directed. Set aside.

Spray a frying pan with cooking spray, then sauté the onion and mushrooms with some garlic powder till onions are cooked.

Spray the mix with the cooking spray again and add in the broccoli and eggplant. Sprinkle with allspice, paprika and more garlic! Cook for about 5-7 minutes or until eggplant is cooked.

Add 1/3 cup of water to the mix, and then the lentils. Cook about 5 minutes (until the water is absorbed).

Add in the salsa and the rice. Cook until the liquid is almost all absorbed.

* VIOLA! This is soo easy to make, and you can use any amount of each veggie, as well as varied amounts of each spice!*

Serves: enough for 1 hungry student

Preparation time: 20 minutes more or less

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
