Mamas Sand Cake
Ingredients (use vegan versions):
  • 6.5 - 7 oz. soy or veggie non-hydrogenated vegan margarine/halvarine
  • 6.5 - 7 oz. veggie vegan sugar
  • 3 Ener-G Egg Replacers (ones that can be beaten into a light foamy substance)
  • 10 oz. all purpose flour
  • 0.35 oz. baking powder (1 small packet)
  • 1 lemon, juice squeezed and peel grated into cake mixture
  • vanilla flavor (as much as one likes)
  • Filling:
  • jam (any kind but I prefer home made red plum jam or apricot jam)
  • 1 cup walnuts
Directions:

Mix ingredients. Make dough. Set 1/3 of dough aside. The other 2/3 roll out and make into a bed in baking pan (don't forget to oil and lightly flour 8" baking pan).

Filling:

Take 3 tbs. jam and spread on bed. Take 1 cup chopped walnuts and spread on top of jam. Beat "eggs" to a foamy substance (my guess would be that bananas would be best here) and spread on top of walnuts.

Grate the set aside dough on top of the dough mixture. Pre-heat the oven to 428F and bake cake for 5 minutes. Lower the temperature to 392F and bake for an additional 30 minutes or until a tooth pick comes out clean. Make sure not to burn the cake!!!

Cool. Sprinkle vegan sugar powder (vegan of course!) on top if desired.

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
