Fruit n Nut Flapjacks
Ingredients (use vegan versions):
  • 50g non-hydrogenated vegan margarine
  • 30g vegan sugar
  • 175g oats
  • 2 tablespoons vegan maple syrup
  • 2 tablespoons brazil nuts, chopped
  • 2 tablespoons almonds, chopped
  • 4 tablespoons raisons
  • 1 banana, mashed with a little vegan soymilk
  • 1/2 teaspoon vanilla essence
  • extra vegan soymilk
Directions:

1. Preheat oven to Gas Mark 6.

2. Melt the vegan margarine and sugar in a pan.

3. Mix together all the dry ingredients in a large bowl (except the banana, soy milk, maple syrup and vanilla essence)

4. Add the maple syrup to the melted margarine and sugar. Add to the dry ingredients and mix well.

5. Mash the banana (or use a blender) with a little soy milk (about a tablespoon) and add the vanilla essence.

6. Add to the mixture and mix well. Add more soy milk if needed. The mixture should be fairly sticky but not too wet.

7. Add mixture to a baking tin (greased) and bake in the oven for 15- 20 mins.

8. Once baked, cut into bars and let cool. Eat.

There are lots of variations you can use. You can add dates or other dried fruit instead of raisons, other types of nuts etc.

Serves: About 12

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
