Fluffy Cranberry-Orange Cookies
Ingredients (use vegan versions):
  • 1/2 cup vegan maple syrup (substitute for honey)
  • 1/2 cup shortening or non-hydrogenated vegan margarine
  • Replacement for 2 eggs
  • 4 teaspoon orange juice
  • 2 teaspoon baking powder
  • 1 cup whole wheat flour, sifted
  • 1 1/2 cups unbleached flour, sifted
  • 1 cup mashed fresh cranberries
Directions:

1. Preheat oven to 375 degrees Fahrenheit.

2. Mix syrup, shortening, egg replacers, and orange juice thoroughly.

3. Add baking powder, salt, and flour and mix well.

4. Stir in cranberries.

5. Shape dough into small balls.

6. Place on greased cookie sheet and flatten with bottom of a greased glass dipped in natural sugar.

7. Bake 8 to 10 minutes. Makes 5 dozen

Sifting the two flours together before adding it to the mixture works well. BE CAREFUL not to sift the baking powder in with the flours!! This does something to the baking powder which causes it not to work. After you add the cranberries the dough will be a little pink, but after they come out of the oven they are normal. These cookies are not too sweet and they have a nice flavor. They cook up nice and light, a delicious snack.

Serves: 5 dozen

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
