Vegetable Gluten (Meat Substitute)
Ingredients (use vegan versions):
  • 1/2 bell pepper
  • 1 small onion
  • 5 garlic cloves
  • 3/4 to 1 cup soy sauce, Bragg's Liquid Aminos or tamari
  • 1 big carrot
  • 2 tablespoon chicken style seasoning
  • 1/4 teaspoon oregano
  • enough water to make 2 1/2 cups
  • 3 cups gluten flour
  • 1 cup nut meal (pecan, walnut or sunflower)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Directions:

Blend first 7 ingredients in the blender. Add enough water to total 2 1/2 cups of liquid. In a large bowl, put gluten flour, nut meal, garlic powder and onion powder and mix well. Then add the liquid and stir until all is moist and a doughy consistency. Make into balls the size of a small orange and put in sandwich baggies. It's a good idea to double bag them. Drop into boiling water and boil for an hour and 15 min. May want to stir once in awhile. After they are done cooking you can slice, chop, mince or do anything you want and use it as any kind of meat. It can be fried, baked or stir fried lightly. Sounds difficult to make, but really is extremely easy and delicious!

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
