Aura's Special Meatless "Meat"
Ingredients (use vegan versions):
  • 1 cup spelt flour
  • 1/2 cup amaranth flour; 1/2 cup millet flour
  • 1/2 cup unbleached flour
  • 1 1/2 tablespoon nutritional yeast
  • 1 tablespoon sea salt
  • 1 tablespoon paprika
  • 1 teaspoon granulated garlic
  • 1/4 teaspoon Italian seasoning pulverized
  • 1 tablespoon beet powder
  • 1 teaspoon celery salt
  • 1 tablespoon onion powder
  • 1 1/2 tablespoon pecan or walnut meal
  • 1 tablespoon extra virgin oil
  • 3/4 cup Vital Gluten
  • 8 oz. water
Directions:

Mix well the flours, spices and the rest of the ingredients. Mix in the vital gluten and add the oil and salt. Gradually add the water until you have a soft dough. (Your dough is ready when it won't stick to your hands.) Take small amounts of the dough and stretch them in the palms of your hands to form like little cutlets. Dump them in the following broth to boil for about 30 min. Broth: (In a medium size pot) put about 6 cups of water, 1 onion cut in half, 2 cloves garlic, salt to taste, 1/2 Tb. beet powder for color.

When done, cut them in strips and cook them for about 10 minutes in your favorite tomato sauce.

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
