Pasta e Fagioli (Macaroni and Beans)
Ingredients (use vegan versions):
  • one large onion
  • 2-3 cloves of garlic (or to taste)
  • 1 heaping tablespoon of bazil
  • 1 heaping tablespoon of oregano
  • balsamic vinegar
  • 5-6 cups of water
  • 2 large veggie buollion cubes
  • approx 2 cups cooked great northern beans
  • 1 15oz can of diced tomatoes drained
  • handful of chopped FRESH parsley
  • approx 3 cups of cooked macaroni, preferably ditalini (sp?)
Directions:

this is one of my all time favorite soups. i made it for the first time yesterday completely vegetarian. i had to be extremely careful since i was sharing it with one of my hindu friends. it turned out wonderfully.

finely chop the onions and garlic. saute them along with the basil and oregano in the vinegar until very soft. meanwhile, in a large pot put the water, buollion, beans, tomatoes, and parsley and heat up. when the onions and garlic are done, add them to the rest of the soup. let this simmer for about 30-45 minutes. then add the macaroni and let this mixture simmer for another 10-15 minutes.

serve with a sprinkle of good quality grated parmesan on top if desired. (it really does make it taste better and you only need a very little bit).

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
