Paula's RAW-some Snacks!
Ingredients (use vegan versions):
  • All ingredients should be Raw and Organic.
  • "Nuts":
  • 1/2 cup sunflower seeds
  • 1 cup pecans
  • 1 cup pistachios
  • 1/2 cup cashews
  • 1/2 cup tomato juice (organic)
  • Produce:
  • 7 stems fresh parsley
  • 2 carrots
  • 2 stalks celery
  • 1/3 onion
  • 1/2 bell pepper
  • 1 clove fresh garlic
  • Herbs: (These are dried and not irradiated, but you use the fresh equivalent too.)
  • 1 tablespoon basil
  • 1/4 teaspoon chili powder
  • 1 teaspoon tarragon
  • 1 teaspoon sea salt
  • 1 teaspoon fresh cracked black pepper
Directions:

Place all "Nuts" in a glass bowl. Add organic tomato juice and stir. Let soak 2 to 4 hours. Puree all ingredients in a food processor, stopping to stir midway through. Blending is easier if you start with the Produce, add Herbs, then Nuts last--DO NOT DRAIN NUTS.

Make patties or bars out of combined mixture. Make them as thin as possible and place in food dehydrator and dry for 12-24 hours (or until dry). Turn patties midway through.

If you do not have a dehydrator, preheat oven on lowest setting (mine was 170 degrees) and dry for 5 to 6 hours. Patty up the mixture, and place it on cookie sheets lined with paper towel. This helps them dry and not stick. Turn them over after 2 or 3 hours. If you like your bars really crisp (like me) it would be good to check them near the end and see if they need more time.

Paneer Tikka Masala

Ingredients:paneer_tikka_masala.jpg

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
