Haystacks
Ingredients (use vegan versions):
  • cooked beans, about six cups
  • corn chips, one bag
  • brown rice, (optional) about four cups
  • veggie options: corn, romaine lettuce, spinach, tomatoes, onions, olives, cucumbers, avocado, if you're daring- pineapple and pickles
  • other optional toppings that are tasty: Veganaise, vegan sour cream, salsa, ketchup (all good)
Directions:

Think of this somewhat like a taco salad, but everyone makes their own. Starting with the beans, I like to use a combo of pinto and black, one can of stewed tomatoes finely chopped, and a can of sweet corn. This adds good flavor and interest. Chips are anything corn-friendly, people love using Fritos - but for the more health- conscious, a bag of organic yellows or blues is yum. This is what happens, warm up the beans till hot,while this is happening dice all veggies and put them in separate bowls (like you are serving tacos). All you do is get your plate and grab two or three handfuls of chips and crunch them into little pieces with your hand. Next, ladle a couple of scoops of beans on top, rice as well if on hand. Then add all or some of the veggies, depending on what you like. Then for added goodness you can put a small spoonful of Veganaise to make it somewhat creamy, ketchup and salsa are also very good in the mix. Then just go sit down and relax and start eating. Good also if you mix it up a little with your fork. You will be amazed at how fast this haystack will grow on your plate as you are making it, this is normal. But you will be even more amazed at how much people love them. Haystacks are awesome when it comes to serving lots of people.

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
