Melongloss Yummy Concoction
Ingredients (use vegan versions):
  • 2 blocks of regular or firm tofu (about half a 19 oz package)
  • onion and garlic powder
  • Italian herb spice (combination of different spices together)
  • wheat free soy sauce
  • soy mayonnaise
  • sesame oil
  • white or black sesame seeds
  • olive or vegetable oil to cook with
  • Heart to Heart mozzarella vegan cheese (best vegan cheese I've had yet)
  • one can tomato sauce (whatever you want..suggested: one that has thick puree kind)
  • two slices of Spelt bread or Spelt English muffins (Vermont bread co. has it)
  • optional: green veggies (i.e. steamed broccoli, spinach, etc.)
Directions:

1) Turn on the pan to medium to high heat and put a capful of vegetable oil.

2) Cut up the tofu into squares and put it in a bowl. Add about one teaspoon of sesame oil, pour in some soy sauce, a dash (or more) of the Italian herb, garlic and onion powder, sesame seeds. Trust me on this: I know there are a lot of spices and condiments, but it's worth it to buy all and you can always add it to the tofu together to make it yummy!

3) Throw the bowl contents in the pan and fry it up!

4) Put the tofu mixture back in bowl and mash it up.

5) Add some tomato sauce.

6) Shred mozzarella vegan cheese and add it!

7) Heat up everything in the bowl in the microwave (or frying pan if you want).

8) Add a tablespoon of soy mayonnaise to mixture.

9) Put the concoction between two slices of spelt bread.

10) Put a steamed veggie on the side (i.e. Broccoli...spinach) for a full meal.

10) EAT! (with ketchup or whatever you want)

Serves: 1

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
