Dodai (Asian Noodle Dish)
Ingredients (use vegan versions):
  • chow mein noodles
  • 1 can of corn (water drained out)
  • 1 can of diced tomatoes (most water drained out)
  • 2 cups prepackaged white miso soup (with tofu)
  • 2 tablespoons soy sauce
  • 1 teaspoon of sesame seeds
  • green onions (diced) for garnish
Directions:

I was looking to create something to go with the main dish for my %100 vegan dinner I was making for my parents. (To show them being vegan doesn't mean eating yucky food, and that 15 year olds can make choices for themselves.) Our pantry barely had anything to work with since I had already used up most of my vegan groceries, but I threw in what I could.

Feel free to throw in, or take out, whatever you want. Dodai, as I've named it, means base. Which is exactly what it is, do whatever you want with it. Have fun! ^_^

Directions:

Place noodles in boiling water for three minutes. While the noodles are cooking; mix corn, tomatoes, soy sauce, and sesame seeds in a bowl. Drain noodles and place in a pan or wok. Dump the other mix into the pan with the noodles and add the two cups of miso soup. Set the heat to low and stir for a few minutes or until the entire dish becomes heated to your liking. Enjoy.

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
