Mashed Potato Pizza
Ingredients (use vegan versions):
  • 1 tablespoon of those little balls of yeast
  • 1/3 cup water
  • 1/2 teaspoon vegan brown sugar
  • 1 cup flour
  • a pinch of salt
  • 1 tablespoon olive oil
  • 3 medium-sized potatoes
  • a little bit of soymilk + vegan margarine, for mashing the potatoes
Directions:

Mix the yeast, warm water, and vegan sugar. Leave that for like 10 minutes. Add the rest (flour, salt, olive oil) and just mix it.. if it's too wet you might want to add more flour. Cover with Glad Wrap (or Cling Film, or whatever you feel like calling it) and put it in a warm place to rise for like 5 minutes (or until the potatoes are cooked, Or just don't even do that because I don't really think it makes much difference).

Peel the potatoes, cook them (by microwave is easiest). Mash them (You may want to add a bit of soymilk + vegan margarine, and even some salt)

Roll out the base to the size you want (It doesn't make a very big pizza, Serves like 1, Maybe 2) then put the potato on it.

And cook it. You can tell when it's done. But yeah I've really forgotten how long it takes... Don't grill it.. Just put it on Fan Bake.. Around 180 degrees C.

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
