My Roommates Awesome Spaghetti Sauce |
Ingredients (use vegan versions):
- 2 (48 oz) cans of tomato juice
- 1 bulb of garlic, finely chopped
- 1 teaspoon garlic salt
- 1 teaspoon dry mustard
- 1 teaspoon thyme
- 1 teaspoon sage
- 2 small red peppers
- 1 teaspoon chopped red peppers or dry pepper flakes
- 2 bay leaves
- 1 box of chopped white mushrooms
- 1 pkg. of vegan veggie burger crumbles
- 1 small can of tomato paste
- and other chopped vegetables you might like (carrots, celery...)
Directions:
Cook de chopped garlic in a bit of
olive oil. Then add the tomato juice,
garlic, garlic salt, dry mustard,
thyme, sage, red peppers and bay
leaves. Cook for 2 hours, uncovered.
Then add mushrooms, veggie burger (heated and crumbled prior),
tomato paste and other chopped
vegetables you might like. Cook for
another 1 1/2 hours, uncovered, or until
desired thickness. Remove bay leaves,
and enjoy! My roommate freezes his
spaghetti sauce in small plastic
containers. It takes a while to make
but it's well worth it!
