Ingredients (use vegan versions):
- 2 tablespoons olive oil
- 1/4 cup onion, finely chopped
- 1 can tomato sauce, 8 ounces (I use Hunt's)
- 3 large cloves of garlic, crushed
- 1 teaspoon fresh or dried sweet basil
- 2 teaspoons vegan brown sugar
Directions:
In a medium saucepan, heat olive oil.
Add onions, stir until the edges begin
to golden.
Add whole can of tomato sauce, and stir
so the onion flavor is absorbed.
Spoon in crushed garlic and basil, stir.
Cover and let simmer on medium to low
heat for a good 10-15 minutes.
Uncover, add vegan brown sugar and stir. The
vegan brown sugar gives the sauce a gorgeous
color and a surprisingly delicious
taste.
At this point, I taste the sauce to see
if I need to add a little more basil or
vegan brown sugar. Cover, and let simmer for
another 10-15 minutes.
Serve with spaghetti, and enjoy!
