Delicious Fruit Smoothie
Ingredients (use vegan versions):
  • 4 oz (1/4 package) silken tofu
  • some fruit--I like to use:
  • 1/2 banana, in 1 inch chunks
  • 4 to 6 strawberries, cut in half lengthwise, and the stems cut off
  • 4 ice cubes*
  • 1-2 cups vegan soymilk (I use vanilla)
  • 1-2 cups orange juice (or any other flavor, but it should ideally be different from your fruits and the fruit juice concentrate)
  • a couple teaspoons of fruit juice concentrate, any flavor (again, make sure it's vegan. if you can't find any just leave it out, add another ice cube and a bit more orange juice.)
  • 1/4 cup vegan sugar
Directions:

Crush the ice in the blender*. Add the rest of the ingredients and blend. This is a good breakfast smoothie. Whenever I feel tired after having just got up, any food, and especially this smoothie, helps me be more awake. It is also good for hot days. I usually double the recipe. Enjoy!

*If your fridge makes crushed ice then use about 1/2 cup crushed ice and just add all the ingredients at once.

Serves: makes 1 serving, but usually I make 2 servings so I can use the whole banana.

Preparation time: about 15 min.

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
