A Wonderfully Refreshing (and healthy!) Smoothie
Ingredients (use vegan versions):
  • unfiltered apple juice (enough to cover blades in blender)
  • 1 frozen banana
  • frozen blueberries, raspberries, blackberries, or cherries (or all of them combined!)
  • 2-3 ice cubes
  • Spiru-Tein brand high protein energy powder- vanilla flavored
  • chunky almond butter - roasted and unsalted
Directions:

If you have a regular blender, put apple juice and banana in and blend on "grate" until most of banana is smooth. Then add other fruits and blend again until smooth. Then throw in ice and blend until smooth. Add 1 scoop of powder and blend for a second to mix thoroughly. Pour into glass and add a few spoonfuls of almond butter, and enjoy!

The key to a yummy smoothie is to blend until there are no chunks, and to make it really cold. The almond butter is a yummy addition and a good source of calcium and protein and the good kind of fat (it only has 1 gram of saturated fat for 2 tablespoons).

I have found these smoothies very filling and a good breakfast before going on your day. My body thanks me every time I feed it one of these smoothies, which is once and sometimes twice a day!

Serves: 1

Preparation time: 10 min (depends on type of blender)

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
