Margie Conners Granola
Ingredients (use vegan versions):
  • 7 cup old-fashioned rolled oats
  • 3/4 cup raw cashews
  • 1/2 cup wheat germ
  • 2 cup coconut chips (very large flakes of coconut)
  • 1/2 cup sesame seeds
  • 3/4 cup sliced almonds
  • 1/4 cup pecan meal
  • 1 cup whole wheat flour
  • 1 cup vegan date sugar
  • 1 cup water
  • 1/2 cup healthy oil (not virgin olive oil - because of taste)
  • 2 tablespoon sea salt
  • 1 tablespoon each vanilla and maple extracts
  • 3/4 cup each date dices, pineapple dices and papaya dices
Directions:

Combine the first eight ingredients in a very large bowl. You may want to break some of the cashews into smaller pieces. In a separate bowl stir together the date vegan sugar, water, oil salt and flavorings. Pour over dry ingredients and mix well. Spread on two large cookie sheets and put into a warm oven - 125-150 degrees. Bake for six to eight hours.

I like to mix it up in the evening and leave it in the oven all night. Remove from oven and let cool. Add the fruits only after the cereal has cooled completely. Have you ever tried to chew on a rock? (Smile) Serve with your favorite soy or nut milk. You can also experiment with other fruits. I have tried dried bananas, cranberries, dried cherries, etc. You will want to make this again and again. And since it has no processed vegan sugars it is good food for (and loved by) everyone.

Serves: A whole bunch

Preparation time: eight hours
