Jamies Cheap Easy Granola
Ingredients (use vegan versions):
  • 2 lbs. thick cut oats
  • 1 cup sunflower nuts (or more)
  • 1/2 cup flaxseeds (or more)
  • 1 cup chopped almonds (or more) or your favorite nut combo
  • 1/2 cup wheat germ
  • a little less than 1/4 cup molasses
  • a little less than 1/4 cup vegan maple syrup
  • a little less than 1/4 cup vegetable oil
Directions:

Oven 300F.

Mix all dry ingredients together in very large bowl. Use your judgment on how much extra flax/nuts/wheat germ you want to use, till the mix has enough of each item for you. I usually go heavy on the flax and nuts.

Mix the molasses, and oil in a small bowl or measuring cup until well blended. Drizzle over dry mix. Stir well. I usually just dive in with my hands, that usually mixes it better than any spoon I've ever used. Mix until coated. It will be somewhat dry looking, not too wet.

Pour about 1/3 of it onto a cookie sheet. Spread evenly. Bake at 300 for 5 minutes. Remove from oven and stir, spread evenly and return to oven for an additional 5 minutes. Granola shouldn't get too brown, just become a bit crunchy. Transfer to an extra bowl to cool, and repeat this process until all is cooked.

Place in air tight container and devour with soy milk at every opportunity.

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
