Lentils and Spinach!
Ingredients (use vegan versions):
  • 2 big cups of lentils
  • 1 box of frozen spinach
  • minced garlic
  • minced ginger
  • cumin
  • paprika
  • cayenne Pepper
  • any other spice you want to add
Directions:

This recipe is very simple to whip up and is very good for you as well! I use it as a quick and easy recipe - apart from the lentils, everything is prepared - I use minced garlic and ginger and pre- powdered spices. It's good for when you don't have a lot of energy for cooking or want to have something tasty and healthy on hand for lunches.

1. Prep the lentils. They can be tinned lentils (is there such a thing?) or lentils you've soaked from the day before. (Never happens with me, this is always a spur of the moment recipe). If they're unprepared, put them in a pot, cover with water to about an inch above, then simmer on medium-high for 30-40 minutes. If they are pre-soaked, you can begin right away.

2. Once the water has simmered away, add the thawed spinach, and the garlic, ginger and spices to whatever your desired taste is! As much or as little as you want. Cover with water to about an inch above, then return to heat and simmer until water has evaporated.

3. Done! Enjoy.

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
