Indian Dal
Ingredients (use vegan versions):
  • 1 cup small red lentils
  • 1 medium onion
  • 1 small hot pepper
  • 2 cloves garlic (or more if you like garlic)
  • vegetable oil
  • spices: 1 teaspoon cumin, 1 teaspoon coriander, 1/8 teaspoon cardamom, 1/4 teaspoon cayenne, 3/4 teaspoon garlic powder, 1/8 teaspoon ginger, 1 teaspoon salt and 1/4 teaspoon pepper
  • water
  • spinach
Directions:

naan/ or rice makes a good meal

Cut up onion, garlic, and as much of the hot pepper you can stand! Place all them in a pot, cover with oil about a 1/2 cup be generous with the oil they should swim in it. Let all of it simmer, about 5 mins. Add lentils (did you wash them?) stir.

Add spices stir, add water to cover lentils. Cook at medium to medium high. You will have to keep checking because the water cooks down and you will have to add more to make the dal the consistency you like. Stir often because it helps the lentils cook down well.

Taste it too, you may need to alter the spice to you liking. Be aware that cardamom, ginger you don't want to add to much of, they take control of flavors, unlike cumin and coriander.

Serves: 3-4 maybe

Preparation time: 1 hour tops

Paneer Tikka Masala

1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.

For Garnishing:
Some chopped coriander.

Method:

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl .  Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent.  Add turmeric powder, yogurt, milk and the remaining coriander.  Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.
